This vegan Fairfax breakfast sandwich is my ode to the delicious Fairfax sandwich by Egg Slut. I remember eating this delicious sandwich last time I was in Vegas a few years ago and have been craving one all this while. We don't have one in the Seattle area and I have been planning to make a version of it for sometime now. In the meanwhile, my husband decided to go vegan and hence this vegan version. If you are wondering what to make for breakfast this next weekend, you don't have to look further. This is a delicious combination of silken tofu scramble, caramelized onions, cheddar cheese, sriracha mayo and avocado all encased in a delicious bun. Yes, please read that again and tell me can you think of anything better to eat? I think not!
Also the Fairfax sandwich is really easy to make. When people see caramelized onions, they immediately think of standing over the stove for 30-45 minutes and stirring constantly. Keep reading and you will see my tip for easy caramelized onions and the sandwich as a whole.

Tips for making the sandwich
The ingredient list for the sandwich is pretty simple.
- I would highly suggest using silken tofu. It makes the best tofu scramble IMHO because the texture is silky and creamy.
- Also use fresh chives which add a lovely flavor to the scramble.
- I used a robust roll like small panini rolls or ciabatta buns since I feel they hold the fillings better. However you can also use a brioche bread roll as is used in the original or any bread of your choice.
Making the Fairfax Sandwich
The 2 main aspects of this sandwich is are the tofu scramble and caramelized onions. I would suggest to get the onions going and prep the tofu and get the scramble going right after so that both are done simultaneously. I have already shared my tip for getting onions caramelized the easy way in my caramelized onion tart recipe.
Caramelizing onions
Heat up some vegan butter or cooking oil in a wide frying pan and add the onions. Fry them for a 3-4 minutes and then add a tablespoon of sugar and mix well. Saute for another couple of minutes and now add a cup of water. Cover the pan and let it cook in the water. Check every 5-6 minutes or so to see if there is enough water. If most of the water has evaporated and the onions still haven't caramelized(turned a deep brown color), then add a ¼ or ½ cup water and keep the pan covered.
Now check the onions again. When they are done, they will turn a deep brown color and all of the extra water should be gone. Add a little salt since the onions already have developed a deep flavor and won't need much, mix well and turn off the stove
Making scrambled tofu
In the meanwhile, remove the silken tofu from the packaging and place between sheets of paper or kitchen towel. This will help soak up the excess water. Remove and cut the tofu into squares. Again heat a wide frying pan at medium heat and add some cooking oil. Once hot, add the tofu pieces in and let it sit for 4-5 minutes.
Flip one of the pieces over to check if the heat has formed a skin on the side of the tofu that was touching the pan. If it has, then flip all of them over and let it sit for another 5 minutes or so making sure none of them burn.Now start breaking up the tofu into smaller curds until they are all done. Season with salt and pepper. I also added some turmeric and finished it off with a couple of pinches of kala namak(black salt) and chopped fresh chives.

Assembling the Fairfax Sandwich
You can use one of the frying pans that have been used earlier or a cast iron pan and heat it to a medium heat. Spread some vegan butter on the insides of the bread or roll you are using and lightly toast both sides. Now place the bottom half of the bun on the pan and place the slice of vegan cheddar cheese on top. Pour 3-4 tablespoons of water around the bun and cover it with a lid. As the water heats ups and turns to steam, the additional heat helps melt the cheese evenly. I am linking this YouTube short by Thee Burger Dude which is how I learnt this hack.
Once the cheese has melted, turn off the stove and place the bun with the melted cheese on top on a plate. Top the cheese with some scrambled tofu and then place some of the caramelized onions on top. Slather some sriracha mayo on the inside of the other half of the bun. Add some avacado(optional) on top of the onions before covering with other half the bun. Voila! It might seem like a few extra steps but I can tell you it is absolutely worth the effort. This sandwich is absolutely yummy and you will want a second one, so make some extra fillings which btw this recipe makes!
Storage and reheating
This sandwich is best had when freshly made and warm. If you need to prep ahead of time, I would suggest caramelizing the onions and storing them in the fridge for up to 2-3 days ahead of time. The other ingredients should be prepped before you are ready to eat including the scrambled tofu.
I would also suggesting not reheating when using a brioche bun since it can make it soggy. Instead I would suggest using a panini or ciabatta roll which might hold up to reheating in a microwave.

Vegan Fairfax Sandwich (Copycat Egg slut Recipe)
Ingredients
- 2 slices Vegan Cheddar Cheese or use ½ cup cheddar shreds
- 2 Brioche Buns/ Ciabatta Rolls sliced
- Vegan Butter to butter the brioche buns
- 2 tablespoon Vegan Sriracha Mayo
- ½ Avocado sliced, optional
Scrambled Tofu
- 16 oz Silken Tofu 450 g
- ¼ teaspoon Turmeric optional
- 1 tablespoon Avocado Oil or sub equal parts vegan butter
- 2 tablespoon Fresh Chives finely chopped
- Salt to taste
- Kala Namak couple of pinches
Caramelized Onions
- 1 Onion large, thinly sliced
- 1 tablespoon Avocado Oil or sub equal parts vegan butter
- 1 tablespoon Sugar
- 1 ½ cup Water
- salt to taste
Instructions
Caramelized Onions
- Heat a wide frying pan at medium and add the oil/butter. Once hot, add the onions and saute for 4-5 minutes. Add the sugar and mix well. Let it cook for 2 more minutes and then add 1 cup water. Cover the pan and turn down the heat to medium low.
- Check every 5-6 minutes to see the level of water remaining. If the onions have not caramelized(taken on a deep brown color) and water in the pan is low, add the rest of the water and cover the pan again. Once the onions are fully caramelized, turn off the stove and add a small amount of salt.
Scrambled Tofu
- While the onions are cooking, cut the pressed tofu in to smaller squares.Heat a wide frying pan at medium heat and add some cooking oil/butter. Once hot, add the tofu pieces in and let it sit for 4-5 minutes.
- Flip one of the pieces over to check if the heat has formed a skin on the side of the tofu that was touching the pan. If it has, then flip all of them over and let it sit for another 5 minutes or so making sure none of them burn.Now start breaking up the tofu into smaller curds until they are all done. Season with salt and pepper. you can also add some turmeric powder and finished it off with a couple of pinches of kala namak and chopped fresh chives.
Assembly
- Heat a wide non-stick or cast iron pan to medium low temperature. Butter the insides of the sliced buns and gently toast it in the pan.Now, place the bottom half of the bun on the pan. Place the slice of cheddar cheese on top. Squirt some water around the bun and cover the pan. The ensuing steam will evenly melt the cheese. Repeat for the second bun and turn off stove.
- Place these halves on a plate. Spoon the scrambled tofu on top followed by the caramelized onions. Slather the insides of the top half of the bun with sriracha mayo and add avocado(if using) on top before covering. Enjoy warm.
