Zucchini Fritters

These zucchini fritters make for a great snack filled with the goodness of veggies and flavors.

Equipment

  • 1 Box Grater
  • 1 10" Cast Iron Skillet/ Griddle

Ingredients
  

  • 3 Medium Sized Zucchini washed and grated
  • ½ cup Frozen or Fresh Corn thaw corn fully if using frozen
  • 1 cup All Purpose Flour
  • ½ cup Vegan/ Regular Parmesan shredded or grated
  • ½ cup Plant Milk/Milk
  • 1 tablespoon Tapioca Starch
  • 2 cloves Fresh Garlic finely chopped
  • 4 tablespoon Cilantro finely chopped
  • 1 stem Green Onion roots removed and finely chopped
  • 1 teaspoon Garlic Powder
  • 2 tablespoon Nutritional Yeast optional
  • 3 teaspoon Salt reserve 1 teaspoon for the zucchini
  • 4 teaspoon Avocado/ Any Neutral Oil for roasting the fritters

Instructions
 

  • Add the salt to the grated zucchini and place in a tea towel/cheese cloth. After 15 minutes, fold the cloth over the zucchini and twist to squeeze out as much liquid as possible. Twist it a couple of more times to ensure most of the moisture is removed.
  • In a medium sized bowl, add the flour, salt , garlic powder, chopped garlic and mix well. Now add all the ingrdients except the milk and mix gently. Slowly add the milk and give it a mix until just combined.
  • Heat a cast iron or non-stick pan to medium heat and add 2 teaspoon of oil until the surface is evenly coated. Now use a large spoon to scoop some of the batter and place on the pan. Gently spread the batter until the fritter is roughly round in shape at around 2-3 inch diameter. You should be able to fit in 3-4 fritters in a 10 inch pan.
  • Let this cook for 3-4 minutes and flip over to cook the other side. Once both the sides are well browned, remove from pan and repeat with the rest of the batter. Add the remaining oil to the pan before the next batch is cooked.
  • Serve with a dip of your choice.

Notes

  1. Play with different grated veggies or whole(like green peas, corn) added to the fritters depending on the season. 
  2. Check instructions above for making these in the air fryer/oven. Please note the cooking time might vary based on the make and power level of the appliances. 
  3. If making on the stove top and you want to cut down on time, use 2 pans ar a time. This way you should get through making the fritters in half the time.
