Navy Beans and Wild Rice Caserrole

A healthy and absolutely delicious dish that is the perfect solution for your weeknight dinner dilemma. This dish is completely vegan and gluten-free.

Ingredients
  

  • 1 cup Navy Beans rinsed
  • 1 cup Wild rice rinsed
  • 5 cup Vegetable Broth or Water
  • 1 cup Baby Bella or Button Mushrooms cleaned and sliced
  • 1 cup Carrots cleaned and diced
  • 2 cup Cauliflower cleaned and separated into florets
  • 2 cup Spinach cleaned and chopped
  • 2 Shallots finely chopped
  • 3 cloves Garlic finely chopped or grated
  • 2-3 cup Coconut Milk
  • 1 teaspoon Powdered Ginger
  • ½ teaspoon Powdered Pepper
  • 1 ½ teaspoon Paprika
  • 2 tablespoon Dry herbs or Italian Seasoning
  • ¼ cup Nutritional Yeast optional
  • Salt to taste
  • 2 tablespoon Avacado Oil/ Neutral Oil

Instructions
 

  • Place the rinsed beans and rice in an instant pot. Add 5 cups of vegetable broth or water. Pressure cook for 26 minutes with natural pressure release.
  • Prepare the vegetables and other ingredients. Heat a large pan and add a couple of tablespoons of avacado or any other neutral oil. Add the chopped shallots, garlic and let it cook for a couple of minutes.
  • Add the chopped carrots and cook for 3-4 minutes. Now add the cauliflower florets and saute. Add salt, pepper, part of the reserved paprika, ginger, dried herbs and mix well. Cook for 4-5 minutes.
  • Add the sliced mushrooms and mix. Now add spinach and half of the reserved nutritional yeast. Mix well.
  • Now add 2 cups of coconut or any plant milk.
  • Now add 4-5 cups of the cooked rice and bean mixture. Mix well and add the remaining milk along with the remaining seasoning if required. Close the pan and let it simmer at low heat for 20-25 minutes.
  • Top with the reamining nutritional yeast and turn off the heat. Serve with a side of garlic bread.

Notes

  1. The cooking time includes the time required for the instant pot to cook and for natural release of the build up steam. 
  2. If you want to swap the beans and rice with any other type, I would suggest choosing them to ensure their cooking times are similar. Else, I would suggest cooking them separately. 
  3. Feel free to add any vegetables of your choice to the dish if you want to skip or swap any of them in the recipe.
