Aloo Chana Chaat

- 4-5 large Potatoes preferably Yukon Gold
- 2 cup Chana(cooked chickpeas)
- 1 medium Red/Yellow Onion finely chopped or sliced
- 2 tablespoon Avocado or Sunflower seed oil
- 2 teaspoon Coriander Powder
- 1 teaspoon Cumin Powder
- 1 teaspoon Chili Powder
- ½ teaspoon Aamchoor(Dried Mango Powder)
- 1 ½ teaspoon Chaat Masala

Toppings

- ⅓ cup Sev
- ¼ cup Chopped Cilantro(Coriander leaves)
- 2-3 tablespoon Chopped red onions
- ½ cup Yoghurt
Bring a pot of water to boil and slowly add the potatoes. Let the potatoes boil for 12-15 minutes or until completely cooked. Check by passing a knife through to see if it goes through completely. Remove from the water and add to a bowl of cold water. Once cool, mash the potatoes roughly and keep aside.
Heat a non-stick pan and add the 1 tablespoon of oil. Once hot, add the onions and saute. Let it cook for 5 minutes. Add the remaining oil and add the potatoes. Saute well and let it roast in the pan for 5-7 minutes medium low heat. Mix every 2-3 minutes to ensure nothing burns.
Continue to roast for a few more minutes until the potatoes get a crispier skin. Now add the cooked chickpeas. Add salt, coriander, cumin powder, aamchoor and chilli powder. Mix well. Add a few spoons of spoons of water if it looks very dry while mixing. Cook for 5 minutes.
Now add the green and sweet chutneys. Mix well and cook for 2-3 minutes. Top with chaat masala and mix. Turn off the stove and add chopped cilantro(coriander leaves).
- Pressure Cooker/ Instant Pot Method for cooking Potatoes
Pressure cooker - Fill the pressure cooker with water to a height of 2-3 inches. Place a base plate and further place an insert on top of this plate. Add the potatoes to this insert and close the lid. Lock it in to position and turn on the stove. You can also use a steamer basket if it will fit in the pressure cooker.
Place the "weight" on top of the valve once you see some steam being released. Wait for the cooker to "whistle" 3-4 times and turn off the stove. Let the steam release naturally for 10 minutes before force releasing it. Remove the potatoes and let it cool.
Instant Pot - Fill the inner pot with 2-3 cups of water. Place a steamer basket inside and add the potatoes to the basket. Close the lid and place the valve to "vent" position. select the "Steam" option and wait for 15 minutes before turning it off. Wait for a few minutes before opening the lid and let the potatoes cool before mashing.
Tips for making crispy potatoes - You can also choose to make the potatoes crispy in the air fryer or the oven. Just spray with some oil and bake at 400 deg F for 20-25 minutes. You can try air frying at 375 deg F for 10-12 minutes. The results vary based on the brand and make of the air fryer, so I would suggest playing around with the temperature and timing until you are happy with the results.
Recipe for Green Chutney
Place ¾ cup of cilantro leaves and ½ cup of mint leaves in the blender. Add 1 teaspoon of cumin powder, ½ teaspoon of chaat powder, 1-2 green chilis and salt to taste. Add ½ cup of water( add more depending on what consistency you want the chutney to be). Blend until you have a smooth paste. Keep it refrigerated if not using right away. It will last in the fridge for up to 5 days and in the freezer for up to 3 months.
Recipe for Sweet Chutney (Brown Chutney)
Soak pitted dates overnight or in freshly boiled water for 2-3 hours. Once softened, place in the blender along with half cup of water in which the dates were soaked. Now add 1 tablespoon of tamarind paste, 1 teaspoon of cumin powder, ½ teaspoon of fennel seeds, ½ teaspoon of chaat masala and ½ cup of water. Follow the steps above for storage.
